This N That

Sometimes things just happen! 
 
There are so many ways to pick apart that statement, not sure where to begin.  So many times we look at events and wonder how they shape our lives.  A little vague?  Sure!
 
At times I feel this life I so enjoy living is spiraling out of control.  Why am I so busy?  Sometimes I just want to say breathe in, breathe out.  Wasn't that a blond joke years ago?  Well I am not blond nor am I a person who thinks that blonds require more patience, energy, etc.
 
What I do know is that I might be ready for a little slower pace.  We are going to enjoy a wonderful evening tonight with some fellow LSU fans.  Nothing like a great night of football with great friends!  I wanted to share this on facebook but Mr. Teacher begged me not to.  "Quarterbacks and Tight Ends whats not to love about this sport!"

I find that I must be rambling, must be that slower pace I am looking for.  So much to share but not enough time to get it together.  I will try to do better in the New Year, but am not making any promises.  After all "Life Happens."

This N That

Sometimes I just don't realize how fast times goes by.  Please accept my apologies for my absence.  Who knew that life would become so busy during this holiday season.
 
I would like to say that I having been baking wonderful marvelous things but it wouldn't be true.  If City Slicker and Mr. Teacher had not taken the time to at least put up a small tree well it just would not have happened.  I did manage to fix us a lovely Thanksgiving and Christmas meal.  No frills, just good food that we all loved.  
 
The sad part about all of this is that I didn't do one beautiful tablescape.  No special napkins, I didn't even get out the Christmas China.  Pretty dull right?
Maybe things will look up in the New Year, no elaborate plans for that either.  
 
My New Year's thought for all of you is that hopefully your life will be nice and even and that you have times for all those things you hold dear and love.  Take time for your family and friends, or friends who are family!
And in case that doesn't work out, we are still have PINTEREST!

Wednesday!
 
Where did you come from?  I need for this week to slow down, have lots to do and there is just not enough time during the day to get it all done.
I have started my Thanksgiving prep and hopefully will be able to share some info with you on Monday.  We will be traveling next Wednesday to go and visit Nana, Uncle Carlos & Aunt Melba.  Then we will be home on Thanksgiving day!
 
My work schedule has been somewhat WAY OVER THE TOP!  Hopefully this too shall settle down for the holidays.

This N That

I'm fixin' to tell y'all something about us Southern folks: Being Southern doesn't mean that I'm not well educated. I may say 'ain't' and 'y'all' and 'honey', "bless a lot of hearts", and I might even 'piddle' around. I'll greet you with a big "HEY BABY" . I might refer to my grocery cart as a buggie' and by golly that's ok......ay. I'm polite and say "Ma'am and Sir". And if you hear a Southern gal say "Oh Hell no!" , you'd better run!!
Love to start my week off with a funny!  I was listening to someone speak on a video conference last week and asked the person next to me if that was what I sounded like?  She said, YES YOU DO!!!!  I do have a tad bit of a southern accent, but I love it.  Love everything about being from the South!

This N That

So sorry it has been such a while since I have posted.  Work as been very busy and I recently lost a friend of 28 years.
 
Seems like writing about it just hasn't been as important as taking some time to get things together.

I am not ready for thanksgiving, behind on everything.  My master plan of getting all of my Christmas gifts together has not been done.
 
Not sure how we are going to handle thanksgiving, since Nana has moved to the country it kinda of leaves things up in the air.
 
I have taken some great new photos of some food projects just haven't had the time to get the recipes in a format to use on here.

Cooking Made Easy

Mr. Teacher and City Slicker love meatloaf, not just any meatloaf.  But a recipe from 9th grade home economics class from about 25 years ago.
You can't beat those tried and true recipes, so good.  I was very lucky to acquire this recipe from my sweet follower Holley's mother about 10 years ago.  Mr. Teacher has had more friends over to eat this meatloaf than any other dish I have ever prepared.  Now I know college kids will eat just about anything, but they have savored this recipe for the past 6 years.  You know it is good when one of his friends recently posted that she was ready for some more meatloaf.
Now usually I have a photo with all the ingredients, but I had some helpers and it got prepared before I could photo everything.  Here is the recipe;
1-2 pounds of 80-20 ground beef
2 eggs
1 cup of bread crumbs 
1/2 cup frozen chopped onions
1/2 t of pepper (I like to ground this fresh)
1/4 t curry powder (I started adding this about 4 years ago)
1 small can of tomato sauce

 The reason I use frozen onions as opposed to fresh is, I just think they cook better.  They are not as strong but give the meatloaf just the right flavor.  I started adding the curry and was surprised at how much we liked it.


I have a well seasoned stoneware loaf pan that I use for this recipe.  Usually this meatloaf is made the night before and let it set overnight.  This allows all of the flavors to blend, in the morning when I get ready to leave I pour the tomato sauce over the meatloaf.



This is a great recipe to use your oven timer on as the dish is cold and will stay nice and cool until your oven comes on.  You will want to cook this in a 350 degree oven for 1 1/2 to 2 hours.  Depends on how accurate your oven temp is.


Nice and evenly cooked, Mr. Teacher  prepared rice in the POSSESSED rice cooker I can not use and also broccoli (He is upset I thought he overcooked it and it was not photo worthy).  Cooks are so temperamental!

Cooking Made Easy

Today I must share with all of you this wonderful new device called 
"THE RICE COOKER"
Isn't it pretty, nice and shiny.  Has all the functions one could ask for in an appliance.  Got it as a Christmas gift, loved it right away.

Now to the real issue, I love being in the kitchen.  Love to cook, love to try new things, love to make things look pretty on a plate.
WHY CAN'T I GET THIS THING TO WORK!!!!!!!!!!

Mr. Teacher has to use this every time.  I have followed the directions to the letter and only get a mixture of what looks like wallpaper paste.  I AM NOT TECHNOLOGY challenged!  
What is the deal?

 If any of you have any tips that you would care to share I am all ears!
